Fundraiser!


Hey~ So I am in a Student Dietetic Association, and we are putting on a fundraiser. I can put you in a drawing for a great Oregon State Beavers Basket (The basket includes: 2 Beavers Stadium Seats, an OSU fleece blanket, 2 coffee mugs and 1 pound of coffee & a $25 Gift Certificate to Hiton Restauruants) . The student who sells the most tickets gets to go to a conference for free!!! If you would like to purchase a ticket, they are 1 for $1, or 6 tickets for $5.

Snow, Randi, and Split Pea Soup.

Hey everyone. So, on Saturday night Drew and I attempted to drive up to PDX to pick up my sister and her friend Xav. Everyone was putting on chains - you seriously couldn't see pavement anywhere, but we did ok with Drews 4WD. After several calls of: the airport is closed, the airport is open, her flight is being rerouted, her flight is on schedule, we finally confirmed that she was in fact being rerouted to Sacramento. So, it took us about 2 1/2 hours to get to Wilsonville (which normally takes 1) and then we came home. We loved it though, it was so peaceful, and we could just relax and talk. So, just so everyone knows, Randi is home. Yesterday dad went and picked her and her friend up at the Sacramento airport. Oh, and Randi, I have a bowl of split pea soup for you.. ;-)

Baby its Cold Outside.



I think that this is the coldest storm I can remember in quite sometime. In Corvallis we have about 2 inches, but it is all turning into ice.. scary. I've been kinda bummed because my weekend off from work pretty much all got canceled. One of my best friends was supossed to stop by on her way back down to Medford, and she can't. And, I was supossed to get together with my dear friend Meghan, Allyson, and their mom Dana and I won't be able to. Bah humbug.. Haha, I'm being a Scrooge. I really do love the snow, but I am praying it will calm down so Drew and I can go get my sister from PDX on Saturday night. I can't wait to see her; she has been in Maui since August. Woohoo!

Rockin Around the Christmas Tree.


So, lately Drew and I have been super bogged down with studying and finals. BUT last Thursday we successfully finished another term! Now, Christmas is so much more fun. I constantly have a Christmas candle burning, Christmas music playing, and am spending lots of time wrapping presents. I love this season of the year. Remember to always let the joy of Christ shine during this crazy time.

To Feel Like a Princess..

Yesterday I came home from work, and Drew had cleaned the house and bought me these flowers.. what a man. It is so nice to know you are loved - Drew is so good to me.. :)

Black Bean and Couscous Salad

I made this recipe for our Couple's Bible Study, and it is VERY easy and good!
Ingredients:
1 c. uncooked couscous
1 1/2 c. chicken broth
3 T. olive (I used grapeseed) oil
2 T. lime juice
1 t. red wine vinegar
1/2 t. cumin
8 green onions chopped (I only used 4)
1 T finely diced cilantro
1 red bell pepper, seeded & chopped (I didn't include)
1 c. frozen corn thawed
2 cans black beans

Directions:
1. Bring chicken broth to boil, stir in couscous. Cover pot and remove from heat. Let it stand for 5 minutes.
2. In large bowl whisk: oil, lime, vinegar, and cumin. Add green onions, pepper, cilantro, corn, beans.
3. Fluff couscous and break the chunks. Add to the bowl with the vegetables and mix well. Season with ground black pepper.

Our House!

So, I haven't shown anyone pictures of our new house, but here are a few. Drew and I love it, even though it is super small. It is very cozy!





Girl's Weekend!






Last weekend, my mom, Amber, Aunt Shirley, Aunt Twila, Kristina and I all got together for a girls weekend. I had school on Friday, but they "kidnapped" me from work on Saturday and we went window shopping, had starbucks, and watched movies. We also made this amazing Parmesian Eggplant - way better than the Olive Garden's. We decided it is going to be an annual event, and we also thought it would be neat to replace our family gift exchange with making a basket for a needy family for Christmas. I love family, and I really wish Drew and I were closer to both his and my relatives.

First Comes Love...


Some people's love stories begin with "love at first sight". Personally, I never wanted that.. it had been my prayer since I was little that God would let me marry my best friend! Well, God answers prayer, and today Drew and I have been married a year and 4 months today! Looking back, I can see God woven in our love story so beautifully it makes me smile every time I think about it. We met the first day of Social Services School at a table during a group project "Onions and Orchids". He was the jock, I was the nerd. I don't know how we managed to go two years without meeting (other than our social status), but we clicked immediately. During those last two years of school, we managed to put aside most romantic feelings and become amazing friends. It wasn't until the Prom of our Senior year that those feelings finally came to the surface. We became a couple on June 6, 2005 - two days before we graduated. College took me to Southern California, while he was in Northern Cali playing football. We dated for a year and 5 months before Drew proposed on November 2, 2006. The summer after my 9th grade year, I volunteered at a church camp in Bandon, OR. Two girls and I had found "Lucky" pennies, and with my penny I wished that God would send me an amazing man for a future husband. I taped it to my Bible, and penned "1 Cor. 13" above it. The morning before Drew proposed, I just happened to be reading 1 Cor. 13. It was a testimony to me of the faithfulness of God. We tied the know at my Papa and Jessie's house on July 14, 2007. It was the wedding of our dreams, and I am so happy that most of our friends and family got to share it with us. That was the wayyyyy shortened story. :)
